Sweet Zucchini Relish

 

 

10 c grated or ground zucchini

4 c grated or ground onion

5T salt

1 T cornstarch

2  1/2 c cider vinegar

6 c sugar

2 teaspoons celery seed

1 T grated nutmeg

1 teaspoon turmeric

 

Grate and cover zucchini with water and sprinkle with salt. Let stand overnight. Drain and add the rest of the ingredients. Simmer until thick. Seal in clean hot jars and process 10 minutes in a boiling water bath. 

Yields 7 pints.

 

Favorite way to use.....  Take a slice of sourdough bread, butter lightly and sprinkle very lightly with garlic powder (or just rub the top of the bread with a fresh clove of garlic. Place slices of cheddar cheese on top to cover. Broil until cheese is melted and bubbling. Remove from oven. Place large slices of tomato freshly harvested from the garden on top of the cheese. You can also add a few leaves of fresh basil. Top with blops of the sweet relish. Top lightly with your favorite blue cheese dressing or mayo.  (This is obviously not for "Waist" watchers, but a delicious combination of fresh flavors from the kitchen and garden.)
